Wine Making
A non-vintage expression built on a base of the 2021 vintage, this cuvée blends Chardonnay (58%), Pinot Noir (41%) and Pinot Meunier (1%) from our Evandale vineyard. Whole bunch-pressed and tank fermented, it underwent full malolactic fermentation and spent 18 months on lees before disgorging.

Appearance: Straw with a fine, persistent bead
Aroma: Lemon zest, strawberry cream, and baked apple
Palate: Crisp and vibrant with citrus drive, textural mid-palate and a touch of toast
Food Match: Natural oysters, smoked salmon, goat’s cheese tart
Cellaring: 3–5 years
