James Halliday's Australian Wine Companions Says...
“A seldom seen crossing of Chasselas and Muscat, at least in Australia, this is a sturdy variety. A quiver of rose petal, red apple, musk and Turkish Delight scents, strung across a sleek bow of nerve and grapey goodness. A delicious wine and highly versatile, I fear that it will remain a sommelier hand-sell and a cellar door darling.”
Fruit was whole bunch pressed then the juice was returned to soak on skins for 4 hours to extract more tannin and build greater texture in the wine. Fruit was subsequently pressed to a stainless steel tank, cold settled and inoculated with the yeast Alchemy, which enhances the floral aromatics of the fruit. Some natural sugars were retained to give the wine balance. Lightly fined and filtered prior to bottling.
