Wine Making

Crafted in Methode Traditionelle 100% pristine hand selected Chardonnay grapes were whole bunch-pressed, under went partial malolactic fermentation and batonnage in tank before bottling for secondary ferment.  Wine was aged on lees for 5 years and has minimal dosage

Tasting Notes

Appearance: Pale straw with fine mousse and persistent bead

Aroma: Gentle floral notes with a hint of seapray

Palate: Crisp lemon and delicate granny smith apples provide understated complexity

Food Match: Salmon, crayfish, scallops and oysters, soufflé, avocado
