Wine Making
Some vintages demand more of you. The 2025 season in Tasmania — warm and dry, with yields of exceptional concentration — produced a Chardonnay of such depth and presence that we couldn't let it disappear into a blend. This is our first Reserve Chardonnay, born not from a plan, but from what the vintage gave us. A handful of barrels, hand selected for their power and precision, were set aside and given the time and attention they deserved.
Fermented and matured in a combination of new and seasoned French oak barriques, the wine underwent full malolactic fermentation with regular batonnage to build texture and integrate the oak seamlessly. The result is a Chardonnay that is unmistakably Tasmanian — bright and taut at its core — but with a weight and complexity that sets it apart.
Tasting Notes
Appearance: Deep straw with a golden hue
Aroma: White nectarine, grilled hazelnut, fresh cream and flint, with a thread of honeysuckle and struck-match complexity from the oak
Palate: Richly textured yet driven by cool-climate acidity. Stone fruit and citrus curd sit alongside a savoury, mineral backbone, with fine, well-integrated oak and a long, layered finish that lingers well after the glass is empty.
Food Match: Roast chicken with tarragon butter, pan-seared scallops, aged gruyère
Cellaring: Now to 10 years
